About Us

Welcome to The Plaza Hotel Dublin with 122 ensuite bedrooms, state of the art conference facilities & excellent cuisine.

Newly renovated and extensively refurbished, The Plaza Hotel. 

Over the last 2 years, the entire interior of the 4 star hotel has been extensively refurbished, now comprising of exciting new eateries. The hotel now offers 122 spacious, comfortable and ensuite bedrooms along with a number of large suites. Two large and naturally lit event spaces, together with 4 meeting suites allow for conferences and events of all sizes, ranging from 5-200 people. 


The Sous Chef is supporting the Head Chef in overseeing the day-to-day operations of the kitchen.


Duties and responsibilities:

o  Assist the Head Chef in managing and organizing all kitchen activities, ensuring a smooth workflow and efficient operations.

o  Supervise and participate in the preparation and cooking of dishes, ensuring adherence to quality standards and consistency.

o  Oversee the work of Chef de Parties and other kitchen staff, providing guidance on techniques and presentation.

o  Maintain high standards of food quality, taste, and presentation.

o  Conduct regular inspections to ensure all dishes leaving the kitchen meet established standards.

o  Collaborate with the Head Chef to plan and develop menus, considering seasonality, ingredient availability, and customer preferences.

o  Contribute creative ideas for new dishes and improvements to existing ones.

o  Assist in managing inventory levels, including ordering and monitoring supplies.

o  Control food costs by minimizing wastage and ensuring proper portioning.

o  Coordinate with the front-of-house staff to ensure smooth communication and efficient service.

o  Collaborate with purchasing and suppliers to source quality ingredients.

o  Supervise and train kitchen staff, including Chef de Parties, Commis Chefs, and apprentices.

o  Provide guidance on culinary techniques, menu knowledge, and kitchen safety.

 

Requirements:

2 years professional experience in a similar position.

Exceptional cooking skills and a comprehensive understanding of various cuisines.

Proficiency in creating and executing recipes, along with a keen understanding of flavor profiles and ingredient combinations.

Creativity in introducing new dishes and enhancing existing ones.

Strong leadership skills to oversee and motivate kitchen staff.

Ability to delegate tasks effectively, providing clear instructions and guidance.

Excellent communication with kitchen staff to maintain a smooth workflow during service.

Superior organizational skills to manage kitchen operations efficiently.

Effective time management to ensure timely preparation and delivery of dishes.

Quick and effective problem-solving skills to address issues in the kitchen.

Proactive approach to prevent and resolve operational challenges.
